Axé comes from the Yoruba word àṣẹ, meaning “soul, light, spirit or good vibrations.” It is a common greeting in Bahia. On our last night we had a luau on the beach. It was a beautiful full moon that lit up the ocean and our hearts. Someone strolling along the shore that night shouted it out to our group: “Axé!” That pretty much sums it all up. And just like that it was our last night together in Trancoso. We started with an amazing Brazilian BBQ (lobster, shrimp, all cuts of meat) and acaraje (a dish brought to Bahia from the depths of Western Africa) at the restaurant of one of my favorite people ever, Fatima, owner of @ocacau. Belly full, slightly tipsy, we then made our way down to Uxua beach for a Full Moon White Party (Part II). But before sharing more, I must note how the magic of the event, in addition to the warm welcome of Bahia, had everything to do with our guests. Love you guys!!!

When rain adds magic to your event. Thank you Universe for this very special Brunch at @floresta_trancoso. Farm to table food served in the middle of a rubber tree farm. Words simply can’t describe the charm of this restaurant. An open kitchen, wood stove and the revered Dona Jandira, the chef who is a descendant of Indians and well known figure in the region. The restaurant does not have a menu, but a dish of the day, which you discover when you arrive. Dona Jandira gifted me with the most delicious Brazilian hot sauce that I can’t wait to serve at my home. In addition to our friends breaking bread, the best part was watching the girls toast their Dad. So much love for him. So well deserved. #Theophilus50

The people who give you their food give you their heart. ❤️Thank you Chef Amal (now my Auntie) for this enriching experience. I have not cooked with love in a long long time. I hope I’ll do again soon (but don’t need the pressure thank you). Chef Amal is the International Chef de Cuisine at @riadfes. Shopping the souks in the Medina and being in the kitchen with her, Chef Abida (Moroccan Chef de Cuisine) and their entire team is an experience I’ll never forget. I’ve already planted seeds of them coming to Miami for a Pop Up. Their food is excellent and the best I had on the entire trip. I learned that people from all over Morocco travel to Fes to eat at Riad Fes because its one of the few places that reminds them of their grandmother’s food. We made Moroccan Salads, Chicken Tajine and a Pastilla au lait et a la fleur d’oranger. Chef Amal shared the recipe for the Chicken Tajine (a North African dish, named after the earthenware pot in which it is cooked). Let me know if you want me to send it to you too. THE PROCESS | Formula 1 is the world’s most prestigious motor racing competition, as well as the world’s most popular annual sporting series. The Paddock Club is known for being one of the most exclusive hospitality experiences available at F1 races around the world. So how does one design that experience? Design for me is first and foremost about the feeling that I want to elicit from guests. No rules. My intuition then leads me to a series of choices that physically manifests the “idea.” I use mood boards. I am decisive (good or bad). And in the end, it always works out.
